Beth’s Fried Noodles with Grilled Chicken in Peanut (Satay) Sauce:

Ingredients 

For the Peanut (Satay) Sauce: 

1 cup unsalted dry roasted peanuts
1 tablespoon tamarind paste
1/4 cup vegetable oil
1 cup water
1/2 teaspoon salt, or to taste
2 1/2 tablespoons brown sugar
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 tablespoon sweet soy sauce (Kecap Manis)
8 dried red chilies
3 cloves garlic, peeled
4 small shallots or pearl onions, peeled
1 tablespoon lemongrass paste
1cm ginger, peeled

For the Grilled Chicken: 
4 chicken breasts, cut into bite-sized pieces

Add to the peanut sauce & marinade:
2 tablespoons soy sauce
1 tablespoon honey
2 tablespoons vegetable oil
Salt and pepper, to taste

For the Fried Noodles:
200g fresh noodles (your preferred type)
2 tablespoons vegetable oil
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon sweet soy sauce (Kecap Manis)
1 teaspoon sesame oil

Optional garnish: cucumber slices, chopped green onions, or cilantro

Instructions
Step 1: Prepare the Peanut (Satay) Sauce 
Use a food processor to grind the peanuts, red chilies, garlic, shallots, galangal or ginger and 1 strip of lemongrass into a smooth paste, adding water if needed. Save some of the sauce for the chicken marinade.

Cook the sauce: Heat 1/4 cup vegetable oil in a saucepan. Add the peanut sauce and simmer for 5-10 minutes, stirring continuously, until the sauce thickens and the oil separates. Set aside.

Step 2: Grill the Chicken 
Marinade: Combine uncooked peanut sauce with soy sauce, honey, vegetable oil, salt and pepper. Add the chicken pieces, and marinate for at least 30 minutes.

Preheat Oven: Set the oven to 200°C and use the grill setting.

Grill: Arrange chicken on a rack over a lined baking sheet. Grill for 15-20 minutes, turning halfway, until cooked through. Broil for the last 2-3 minutes for a charred finish. Set aside.

Step 3: Cook the Fried Noodles 
Blanch Noodles: Bring a pot of water to a boil. Add noodles and blanch for 1-2 minutes, then rinse with cold water and drain.
Stir-Fry: Heat 2 tablespoons of oil in a wok or large pan. Add minced garlic and stir-fry until fragrant. Add the blanched noodles, soy sauce, sweet soy sauce (if using), and sesame oil. Stir-fry for 2-3 minutes until evenly coated and heated through.

Step 4: Assemble the Dish 
Serve the fried noodles as the base on a large plate or bowl.
Arrange the grilled chicken pieces over the noodles.
Generously drizzle the peanut (satay) sauce over the chicken and noodles.
Garnish: Sprinkle with chopped peanuts, green onions or cilantro for added flavor.
